Add the bones of two chicken carcasses including the organs into a large stockpot, slow cooker or electric rice cooker. (You can also use chicken feet, wings or necks). Add enough water to cover the bones with space to boil. Add two tablespoons of apple cider vinegar. Bring to a boil. Scoop off the scum from the top of the pot. Simmer on low for a minimum of 6 hours, preferably 24 hours. If the water evaporates during simmering, add water to keep the bones covered. After simmering, strain the bones and transfer the liquid into containers. Store in the fridge for one week or the freezer for 3 months. The bone broth should have a jelly consistency when cold, and liquid when warmed up.

The slow and low heat is the best way to process the bones, but a pressure cooker can be used if it’s the only option. If you use a pressure cooker, cook on high for 1.5 hours.

TIP: Prior to starting your bone broth, boil two whole chickens, pull the meat off the bones and store in the fridge. The full chicken carcasses have great cartilage and connective tissue for bone broth, and you’ll save money on chicken meat.

SOME FANTASTIC BENEFITS OF BONE BROTH:

1. Gut balance: Increased digestion and ability to combat food sensitivities. Helps with the growth of good bacteria and supplies important electrolytes.

2. Immune system function: Collagen/gelatin and amino acids help seal openings in the gut lining, which reduces general inflammation in the body. This allows your antibodies to fight real infections instead of healthy tissue.

3. Skin health: The collagen in bone broth forms elastin which slows down signs of aging, and improves skin texture

4. Strengthens Joints and bones: Helps reduce wear and tear on joints because gelatin allows joints to glide with less friction. Joints stay flexible, and bone density is maintained.

5. Boosts detoxification processes: Potassium and glycine improves the detoxification functions in cells and the liver. The essential minerals in bone broth help block heavy metals from building up in the body.
