HOW DID YOU ARRIVE IN BALI?
I spent some time travelling to destinations like Tahiti, Japan and around South-East Asia before landing in Bali.
CAREER HIGHLIGHT SO FAR?
Designing a kitchen for a super yacht, and then designing their menus. I would cook, package and send the full menu to the yacht - wherever it was docked.
YOU’RE HUNGOVER AND YOU REACH FOR YOUR PHONE - WHO WILL SAVE YOU?
It’s BO$$ MAN Burger every time. Killa burgers.
YOU’RE ON A HEALTH KICK - WHAT DO YOU EAT?
This week I made sous vide chicken breast (brined overnight), stir-fried broccoli, green beans and cabbage; with garlic, light soy and pilaf style brown rice. Super simple but serves a purpose.
IT’S A BUDGET DAY & YOU HAVE 100K FOR DINNER - WHERE DO YOU GO?
Kyūjin for yakitori in Berawa, or Taco Beach Grill for Mexican in Seminyak.
WHAT ARE YOU DOING RIGHT NOW?
I’m designing a new range of Sushi for delivery to be available to order on vivregourmet.com best job ever. Japanese food turns me on!
BEST STEAK IN TOWN?
Si Jin Steakhouse in petitenget. Epic steak. Dry aged Wahyu for days.
WHAT EXCITES YOU ABOUT THE FUTURE OF FOOD IN BALI?
Where else do you have so many different food cultures in one place? That’s exciting.
